Roasted Delicata Squash by Ripple Effect Health Coach

Delicata squash is also known as a peanut squash, Bohemian squash or sweet potato squash. It is high in fiber and loaded with potassium but actually low in carbs. It also contains iron and Vitamins A and C. It has a mild slightly sweet taste.

Instructions to Cook - Roasted Delicata Squash by Ripple Effect Health Coach

I slice the squash in half and cut one side into rings and the other I leave whole. To change things up the rings are brushed with olive oil and the other side is brushed with a mix of olive oil, honey, paprika and cinnamon.

Preheat oven to 400 degrees

Bake for 15- 20 minutes

Remove from oven and flip the rings over and brush slightly with more olive oil.

Return to oven to cook 15-20 minutes until soft.
