Oatmeal Pancake

If you are looking for a breakfast to keep you full until lunch, then look no further! This "pancake" is super nutritional and very filling.


This was one of my mom's favorite breakfasts before she passed away. If I wasn't there to make it she had the sitter call me and get the recipe. Which was difficult because I always "eyeballed" the amounts!  I've measured it out so you can make it yourself for breakfast!

INGREDIENTS

  • 1 Egg

  • 1/3 cup of old fashioned oats (more or less considering the size of your egg)

  • 1/2 chopped banana

  • 1 TBSP of chopped nuts

  • 1 TBSP plain protein powder

  • 1/2 tsp cinnamon

  • pinch of baking powder

Beat the egg then mix in all the above ingredients. This makes a super thick "pancake.” Spread it out in a skillet and cook until you see the egg starting to get cooked/change. Flip and cook for a few more minutes. Remove and drizzle with a little bit of honey!

  • You can always use blueberries or peaches in place of the banana.

  • Instead of chopped nuts, smear some almond butter or sun-butter on top after the pancake is cooked.
