Strawberry Pretzel Salad
My cousin shared this recipe with me 20 plus years ago and I always make it for Christmas family dinners. It's so bright and red and YUMMY!
Crust:
2 1/2 cups coarsely crushed pretzels (can be gluten free)
3/4 cup melted butter
3 Tbsp sugar
Filling:
8 oz. cream cheese
8 oz. Cool whip
1 cup sugar
Topping:
6 oz strawberry gelatin
2 cups boiling water
20oz chopped strawberries ( can be fresh or frozen)
COOKING INSTRUCTIONS:
Combine all crust ingredients in a mixing bowl or food processor. Process or mix by hand well. Pat into 13x9 glass pan. Bake 8-10 min on 300 degrees. Cool.
Combine filling ingredients. Mix until light and fluffy. Spread evenly over cooled crust. Make topping. In a bowl, stir together gelatin and boiling water until dissolved. Add chopped berries and chill until partially set. Pour over cream cheese mixture and chill overnight to set totally.
